Barry Callebaut, the world leader in cocoa, presented "Ruby" (pink) chocolate as the fourth category, along with dark chocolate, milk and white, in the name of a cocoa bean of the same name.
This discovery kicked off the search for years of experience in the group's workshops in France and Belgium, to understand how to exploit the properties of the ruby bean and then set up a manufacturing process.
